Segunda sem carne / Meatless Monday

ingredientes

  • 1/4 chávena de queijo creme
  • 1 pepino, em fatias finas 
  • 4 fatias de pão de trigo integral


preparação

 
1. Barre 1 colher de queijo creme num pedaço de pão e cubra com fatias finas de metade do pepino.
2. Na outra fatia de pão, espalhe outra colher de sopa de queijo creme e junte as fatias, formando a sanduíche.
3. A segunda sanduiche é feita da mesma forma.
4. Corte ao meio ou em quartos as sanduiches e sirva.

 

 

ingredients

  • 1/4 cup cream cheese
  • 1 persian cucumber, thinly sliced (any variety of cucumber will work, but i like the persians for this san
  • 4 slices whole wheat bread

preparation

1. Spread 1 tbsp of cream cheese on one piece of the bread and top with thin slices of half of the cucumber. 
2. On another slice of bread, spread another tbsp of cream cheese and then sandwich the two slices together. 
3. Continue to make the second sammie. 
4. Cut in half or quarters and serve.

Segunda sem carne / Meatless Monday

Sanduiche (em pão tipo bagel) com pepino e salmão fumado

serve 2

ingredientes:
• 60 gramas de salmão defumado, dividido
• 2 pães (tipo bagel) cortados
• 4 colheres de sopa de creme de queijo, dividido (a gosto)
• 10 rodelas de pepino
• 1 colher de chá de alcaparras (como enfeite ou opcional caso não aprecie)

instruções:
1. Cortar e torrar os pães.
2. Espalhe o queijo-creme nos pães.
3. Adicionar cerca de 5 das rodelas de pepino, por cima do queijo-creme.
4. Cobra com cerca de 30gramas de salmão fumado, e decore com as alcaparras.
5. Adicionar a outra fatia do pão, e cortar ao meio.




Cucumber and smoked salmon bagel sandwich recipe

Serves 2

Ingredients:

  • 2 ounces smoked salmon, divided
  • 2 bagels, sliced
  • 4 tablespoons cream cheese, divided (more to taste)
  • 10 cucumber rounds, divided
  • 1 teaspoon capers, as garnish

Directions:

  1. Slice and toast your bagels.
  2. Spread the cream cheese over one half of the bagel.
  3. Add about 5 of the cucumber rounds over the cream cheese.
  4. Top with 1 ounce of smoked salmon, and garnish with a few capers.
  5. Add the top half of the bagel, and slice it in half.

Segunda sem carne... porquê? Meatless Monday... Why ?






Porquê sem carne?

Ao não comer carne uma vez por semana pode reduzir o risco de doenças crónicas preveníveis, como cancro, doenças cardiovasculares, diabetes e obesidade, assim como pode ajudar a reduzir a pegada de carbono e poupar recursos preciosos como a água fresca e os combustíveis fósseis.

Benefícios para a saúde

  • LIMITE risco de cancro: Centenas de estudos sugerem que dietas ricas em frutas e vegetais podem reduzir o risco de cancro. O consumo de carne vermelha e processada está associado ao cancro de cólon.
  • Reduzir a doença cardíaca: Dados recentes de um estudo da Universidade de Harvard descobriram que a substituição de gordura saturada alimentos ricos (por exemplo, carne e produtos lácteos de gordura total) com os alimentos que são ricos em gordura poliinsaturada (por exemplo, óleos vegetais, nozes e sementes) reduz o risco de doenças cardíacas em 19%.
  • Combater diabetes: A pesquisa sugere que um maior consumo de carne vermelha e processada aumenta o risco de diabetes tipo 2.
  • Reduzir a obesidade: Pessoas cuja dieta tenha pouca carne ou seja vegetariana têm pesos corporais e índices de massa corporal significativamente mais baixos. Um recente estudo do Imperial College de Londres, também descobriu que a redução do consumo de carne, em geral, podem prevenir a longo prazo o aumento de peso.
  • Viver mais: o consumo de carne vermelha e processada está associada com aumento da mortalidade total, mortalidade por cancro e mortalidade por doença cardiovascular.
  • Melhorar sua dieta. Consumir feijão ou ervilhas resulta em maior consumo de fibras, proteínas, ácido fólico, ferro, zinco e magnésio com menor ingestão de gorduras total e saturada.


Benefícios ambientais

  • REDUZIR A PEGADA DE CARBONO. A Organização das Nações Unidas para a Alimentação e Agricultura estima que a indústria da carne gera cerca de um quinto das emissões de gases de efeito estufa, os quais aceleram as alterações climáticas a nível mundial. 
  • Minimizar o uso de ÁGUA. As necessidades de água dos animais são enormes, muito acima dos vegetais ou grãos. Estima-se que 1.800 a 2.500 litros de água vão para uma única libra de carne. A soja/tofu produzido na Califórnia exige 220 litros de água por quilo.
  • Ajudar a reduzir a dependência de combustíveis fósseis. Em média, cerca de 40 calorias de energia de combustíveis fósseis vão para cada caloria de carne nos EUA. Moderar o consumo de carne é uma ótima maneira de reduzir a procura de combustíveis fósseis.



Porquê segunda-feira?

Para a maioria a semana começa à segunda-feira. Na segunda-feira passamos da liberdade do fim de semana para a estrutura do trabalho ou da escola. Planeamos a semana que começa.

Desde cedo que interiorizamos este ritmo, e estudos sugerem que mais facilmente se mantêm hábitos iniciados a uma segunda-feira. Por isso a segunda-feira é o dia ideal para iniciar uma mudança para a saúde e para a saúde do planeta.

A segunda-feira é o apelo à acção na agenda semanal, e se deixar passar esta segunda-feira, há sempre uma outra hipotese na próxima semana para uma segunda sem carne!



Why Meatless?


Going meatless once a week may reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save precious resources like fresh water and fossil fuel.


Health Benefits
  • LIMIT CANCER RISK: Hundreds of studies suggest that diets high in fruits and vegetables may reduce cancer risk. Both red and processed meat consumption are associated with colon cancer.
  • REDUCE HEART DISEASE: Recent data from a Harvard University study found that replacing saturated fat-rich foods (for example, meat and full fat dairy) with foods that are rich in polyunsaturated fat (for example, vegetable oils, nuts and seeds) reduces the risk of heart disease by 19%
  • FIGHT DIABETES: Research suggests that higher consumption of red and processed meat increase the risk of type 2 diabetes.
  • CURB OBESITY: People on low-meat or vegetarian diets have significantly lower body weights and body mass indices. A recent study from Imperial College London also found that reducing overall meat consumption can prevent long-term weight gain.
  • LIVE LONGER: Red and processed meat consumption is associated with increases in total mortality, cancer mortality and cardiovascular disease mortality.
  • IMPROVE YOUR DIET. Consuming beans or peas results in higher intakes of fiber, protein, folate, zinc, iron and magnesium with lower intakes of saturated fat and total fat.
Environmental Benefits
  • REDUCE YOUR CARBON FOOTPRINT. The United Nations’ Food and Agriculture Organization estimates the meat industry generates nearly one-fifth of the man-made greenhouse gas emissions that are accelerating climate change worldwide . . . far more than transportation. And annual worldwide demand for meat continues to grow. Reining in meat consumption once a week can help slow this trend.
  • MINIMIZE WATER USAGE. The water needs of livestock are tremendous, far above those of vegetables or grains. An estimated 1,800 to 2,500 gallons of water go into a single pound of beef. Soy tofu produced in California requires 220 gallons of water per pound.
  • HELP REDUCE FOSSIL FUEL DEPENDENCE. On average, about 40 calories of fossil fuel energy go into every calorie of feed lot beef in the U.S. Compare this to the 2.2 calories of fossil fuel energy needed to produce one calorie of plant-based protein. Moderating meat consumption is a great way to cut fossil fuel demand.
Why Monday?

For most Americans the week begins on Monday. On Monday we move from the freedom of the weekend back to the structure of work or school. We set our intentions for the next six days. We plan ahead and evaluate progress.

From an early age we internalize this rhythm. And studies suggest we are more likely to maintain behaviors begun on Monday throughout the week. That makes Monday the perfect day to make a change for your health and the health of our planet.

Monday is the call to action built in to every calendar each week. And if this Monday passes you by, next week is another chance to go meatless!

Segunda sem carne / Meatless Monday

Bolinhos de peixe da Sophie Dahl

Sophie Dahl's Fishcakes

Esta receita é retirada do livro As Voluptuosas Receitas de Miss Dahl de Sophie Dahl e confesso é uma das minhas receitas favoritas. 

This recipe is taken from Miss Dahl's Voluptuous Delights by Sophie Dahl, and I must confess that is one of my favorite recipes.


Ingredientes (2 pessoas) 

450 g de salmão cozinhado, em lascas
1 colher de sopa de maionese (feita em casa ou de boa qualidade)
1 colher de chá de mostarda
Salsa e aneto picados
1 ovo (com pitada de sal)
1 colher de azeite


Misture todos os ingredientes, excepto o ovo e o azeite.  Molde a mistura do salmão em pequenas formas arredondadas.  Bata o ovo com uma pitada de sal e pincele os dois lados dos bolinhos, usando um pincel ou os dedos.

Aqueça uma colher de sopa de azeite numa frigideira e frite os pastéis cerca de 3 minutos de cada lado até ficarem bem estaladiços.  Sirva.


Ingredients (Serves 2)
450 g salmon, poached, flaked, bones removed
1 tbsp good quality mayonnaise
1 tsp Dijon Mustard
handful fresh flatleaf parsley, chopped
handful fresh dill, chopped
1 egg (with a bit of salt)
1 tbsp olive oil


Mix the salmon, mayonnaise, parsley, dill, and Dijon mustard in a bowl. 
In another bowl crack the egg, add a bit of salt and stir it.
Shape the mixture into cakes using your hands and coat the cakes with the egg pulp. 
To cook the fishcakes, heat the oil a large frying pan over a medium-high heat. Fry the fishcakes in the oil for 3-4 minutes on each side, or until golden-brown and crisp. Serve.

Nota: Há uma versão desta receita com salmão e caranguejo, para isso basta adicionar à mistura carne de caranguejo. 

Footnote: There is another version of this recipe with salmon and crab meat, and to do that recipe, all you need is to add crab meat to the mixture.

Sanduiche sem carne

ingredientes
• ¼ cebola vermelha (ralada)- opcional
• ½ chávenas de Maionese
• 1 colher de sopa de mostarda Dijon (ou mostarda normal)
• 8 fatias de pão branco fatiado
• 8 folhas de alface
• 2 tomates inteiros, em fatias finas e polvihados com sal
• 226 gramas de mozarela

Misture a cebola, maionese e mostarda numa tigela.
Barrar uma porção da mistura de maionese em cada pedaço de pão e cobrir com alface. Colocar as fatias de tomate e queijo; cobrir com as fatias de pão. Cortar ao meio e servir.


Meatless BLT
Ingredients 
·         ¼ whole Red Onion, Grated
·         ½ cups Mayonnaise
·         1 Tablespoon Dijon Mustard, Preferably Whole-grain
·         8 slices Good-quality Sandwich Bread
·         8 leaves Romaine Lettuce, Torn Into Large Pieces
·         2 whole Tomatoes, Thinly Sliced And Lightly Salted
·         8 ounces, weight Smoked Mozzarella, Thinly Sliced
·         ½ cups Crumbled Plain Pita Chips



Mix the onion, mayonnaise, and mustard in a bowl.
Spread a portion of the mayonnaise mixture on each piece of toast and top with lettuce. Top 4 of the toast slices with tomatoes, cheese, and pita chips; cap with the remaining 4 toast slices. Halve and serve.

Segunda sem carne / Meatless Monday

Brócolos salteados com cogumelos

ingredientes

1 colher de sopa de azeite extra-virgem
150 gramas de cogumelos fatiados
1 colher de sopa de salsa picada
1 dente de alho - esmagado
Uma pequena porção de pimentão vermelho
500 gramas de brócolos (cortados)

1 - Aquecer o azeite numa frigideira grande e anti-aderente em lume médio-alto, adicionar os cogumelos e cozinhar (entre 4 a 5 minutos), mexendo sempre, até dourar.  Juntar a salsa, o alho e a pimenta vermelha e misturar bem. Retirar para um prato e reservar.

2- Lavar os brócolos e agitar, levemente,  numa peneira.  Aquecer a  frigideira em lume médio.  Adicionar o brócolos e mexer, cerca de 10 minutos, até murcharem.  Diminuir o lume para médio-baixo. Cobrir e cozinhar, cerca de 4 a 5 minutos, até ficarem tenros.

3- Misturar os cogumelos e cozinhar, mexendo cerca de 1 minuto, até reaquecer.



Broccoli Rabe with Sautéed Cremini Mushrooms 

Ingredients

1 tablespoon extra-virgin olive oil
2 cups sliced cremini mushrooms (about 5 ounces/150 g)
1 tablespoon finely chopped flat-leaf parsley
1 clove garlic, crushed
Pinch of crushed red pepper, or to taste
1 bunch broccoli rabe (about 1 pound/500 g), 1 inch/2.5 cm trimmed from stems, cut into 1 1/2-inch/1-cm lengths



1- Heat the oil in a large nonstick skillet set over medium-high heat until hot enough to sizzle a mushroom. Add the mushrooms and cook, stirring, until golden, 4 to 5 minutes. Stir in the parsley, garlic, and red pepper flakes until blended. Remove to a plate and set aside.
2- Rinse the broccoli rabe and lightly shake in a colander, leaving some water clinging to the leaves. Heat the same skillet over medium heat until hot enough that a drop of water sizzles. Add the broccoli rabe and stir until wilted, about 10 minutes. Reduce the heat to medium-low. Cover and cook until tender, 4 to 5 minutes.
3- Stir in the mushrooms and cook, stirring, until reheated, about 1 minute.

Sanduiche de vegetais grelhados

ingredientes

2 colheres de sopa de azeite
1 colher de sopa de vinagre balsâmico
1/4 colher de chá de sal
1/8 colher de chá de pimenta preta
4 cogumelos Portobello (remover os talos)
1 pequena porção de espargos, aparados e cortados ao meio
1 pimento vermelho grande, cortado ao meio e sem sementes
4 fatias de pão italiano
85 gramas de queijo de cabra

1 - Pré-aquecer o grill ou grelha.
2 - Numa tigela pequena, misturar o azeite, o vinagre balsâmico, sal e pimenta.  Besuntar os cogumelos, espargos e pimentão com a mistura.
3 - Grelhar vegetais, virando uma vez, até ficarem tenros, cerca de 10 minutos para os espargos e pimento, e cerca de 12 minutos para os cogumelos.  Retirar.  Quando os pimentos estiverem frios, retire-lhes a pele.
4 - Desligar a grelha, e coloque o pão sobre a grelha, cerca de 2 minutos.
5 - Espalhar o queijo de cabra no pão. Colocar os cogumelos em cada fatia. Cobrir com o pimento  e aspargos e servir quente.



Open-Face Grilled Vegetable Sandwich 

ingredients

2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
4 portobello mushrooms, stems removed
1 small bunch asparagus, trimmed and spears cut in half
1 large red bell pepper, halved and seeded
4 slices Italian bread
3 ounces goat cheese

1 - Preheat grill or broiler.
2 - In small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Brush mushrooms, asparagus, and bell pepper with oil mixture.
3 - Grill or broil vegetables 4 inches from heat, turning over once, until tender, about 10 minutes for asparagus and bell pepper, and about 12 minutes for mushrooms. When cool enough to handle, peel and slice pepper.
4 - Turn off grill or broiler. Place bread on grill or broiler rack until warm, about 2 minutes.
5 - Spread goat cheese on bread. Place mushrooms on each slice. Top with bell pepper and asparagus. Serve warm.
